Oranges and Creme Fruit Dip

Ingredients: 
1 cup cottage cheese
1 cup vanilla yogurt
1 tsp orange peel
Drop of Orange Extract (optional)
1 packet ThinStick™ (optional)

Prep Time: 5 minutes
Servings: 2

Directions:
Blend all ingredients together in a blender or food processor until smooth, about 30 seconds.
Spoon into a small bowl and serve with fresh fruit (like strawberries, apples or bananas).

This is a great, high protein snack that will satisfy your hunger and provide much needed nutrients to get you through the afternoon lull. :)

*For people who are watching calories, using low-fat cottage cheese and light, low-fat yogurt will significantly reduce total calories.

Egg Salad Sandwich

Ingredients
4 hard boiled eggs
1 Tbsp Light Best Foods® Mayo
1 Tbsp Mustard
1 Stalk Celery, finely chopped
1/4 Yellow or Orange Bell Pepper, chopped
1 tsp sweet or dill pickle relish
1 Tbsp fresh parsley
1 slice whole-grain bread
1 leaf of lettuce
1 packet of ThinStick™

Directions
1) Chop 1 whole egg and 3 egg whites (discard the three extra yolks)
2) In a small mixing bowl, combine chopped eggs, Light Best Foods® Mayo, ThinStick packet, mustard, celery, bell pepper, pickle relish and parsley.
3) Toast whole grain bread and top with lettuce leaf and egg salad mix.


ThinTip) Keep a half dozen boiled eggs in your fridge at all times. Great for adding to salads, sandwiches or just a last minute protein snack!!

Tart Lemon Ice Cream Recipe

 

Ingredients

  • 1 large lemon, juiced and zested
  • 1 cup white sugar
  • 1 cup milk
  • 1 cup heavy cream, chilled

Directions

  1. Combine the lemon zest and sugar in the container of a food processor. Blend until the zest is very fine. In a medium bowl, stir together the sugar and milk until sugar has dissolved, then stir in the lemon juice. In a separate bowl, whip the heavy cream until stiff but not grainy. Gently fold the whipped cream into the lemon mixture until evenly blended.
  2. Pour the mixture into a 9x5 inch loaf pan, and cover with plastic wrap. Freeze for 3 hours, or until firm.

Black Forest Pudding

Ingredients:
1 cup cold skim milk
1 scoop ThinStick™ Shake
2 Tbsp fat free, sugar free instant chocolate pudding mix
1/2 cup Cherry Pie filling (sugar free)
1/2 cup Cool Whip® Fat Free

Directions:
1) Pour milk in blender and add ThinStick, pulse blend about 10 seconds
2)Add pudding mix and blend on high until thickened, about 30 seconds, scrapping sides as needed
3)Pour half the pudding into two small glasses (save the remaining half) Layer Cherry pie filling on top of pudding, then pour the remaining pudding on top.
4) Chill in refrigerator for about 20 minutes. Top each glass with the cool whip, serve and enjoy this guilt free, super satisfying dessert!

Banana Cream Pudding

Here is one, that anyone could enjoy at the end of the day.

Servings: 2
Preparation Time: 25 minutes

Ingredients
1 cup cold skim milk
2 scoops of ThinStick Shake®
2 Tbsp fat-free, sugar-free banana instant pudding mix
1 banana, sliced
1/2 cup fat-free whipped topping









1. Pour skim milk in blender, add ThinkStick Shake®. Blend on medium speed for 5 seconds.

2. Add pudding mix and blend on high until thick and creamy. Scrape sides as needed. (About 45 seconds).

3. Spoon into two desert glasses and refrigerate for 30 minutes. If making in advance, a small piece of plastic wrap laid on surface of pudding will prevent a skin from forming.

4. Top each glass with a half banana sliced and a dollop of whipped topping.

Trick or Treat?


Mothers often struggle to get their children to eat fruits and vegetables...but mostly vegetables. So how can you overcome this and get them to eat an adequate amount of daily fruits and vegetables each day? My suggestion..trick them with a treat!

"Sweet Green Smoothie"
1/2 cup frozen blueberries
1/2 frozen banana
4 strawberries
1/2 cup peach slices
1 kiwi unpeeled
1 kale leaf
1/4 cup of plain or vanilla yogurt
4 baby carrots
1/2 cup yellow squash
1 tsp flax seed
1 tbsp old fashioned oats
1/2 cup cold water
4 ice cubes

Random ideas:
  • Mix carrots, spinach, and zucchini into spaghetti sauce or other sauces
  • Finely mince vegetables into hamburger patties or turkey burgers
  • Minced vegetables into tuna for sandwhiches
  • Put carrots or advocados in smoothies (it's good, trust me!)
  • Homemade soups with a lot of vegetables
  • Put banana on peanut butter toast for breakfast
  • Add spinach to pancakes
  • Vegetable Pizza
  • Vegetable Omelets

Refresh Yourself!


Garden Salad, Caesar Salad, Fruit Salad, etc. Whatever type of salad you prefer they can be refreshing and beneficial! I have noticed quite often that women eat more salad than men, why is this? Do men feel that meat is "manly" and salad just...isn't? There is such an opportunity for variety when it comes to salads! You may use different types of lettuce, dressings, vegetables, fruits, nuts, seeds, cheese, etc. Just make sure you are not going overboard with the additions or it may just lose the benefit of being low in calories!

By the way, this does not include dessert salads!! :)

Ed's Mexican Tortilla Soup

Ed (Metabolic Maintenance's CEO)shared this yummy soup recipe with us. You can still eat soup in the summer, right?!?








2 garlic cloves, chopped
Dash garlic salt
Equal parts water and Pico de Gallo (found in the Hispanic section of your local grocery store)
1 lb. shredded, cooked chicken breast
Sauté garlic cloves in 1 tbs olive oil. Add water, salt, pico de gallo & chicken. Simmer on low until heated through. Serve with optional toppings below.

Optional toppings/additions

Tortilla chips

Sliced Avocado

Sour Cream

Sliced Green Onions

Fresh chopped cilantro
