Artichoke Chicken Salad

Servings: 2
Prep Time: 15 mins

1 can (12 oz - I prefer Costco brand) white meat chicken chunks, drained
1 can (14 oz) artichoke hearts in water, drained and course chopped
1 English cucumber, chopped
1 tomato, chopped
1 Tbsp fresh parsley, finely chopped
1 clove garlic, shredded or minced
Salt and Pepper to taste

Combine above ingredients and drizzle with 1/3 cup Balsamic Vinaigrette dressing. Serve over a bed of lettuce and enjoy!
